Bulgur Kofta Salad Bowl
Ingredients:
- 500g Seasoned Shami Bulgur Kofta
- 1 cup cooked bulgur wheat
- 1 cucumber, diced
- 1 tomato, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup crumbled feta cheese (optional)
- Juice of 1 lemon
- Salt and pepper to taste
- Olive oil for drizzling
Instructions:
- Preheat your oven to 180°C (350°F).
- Place the seasoned Shami Bulgur Kofta on a baking sheet lined with parchment paper.
- Bake the kofta in the preheated oven for 15-20 minutes, or until cooked through and lightly browned.
- In a large mixing bowl, combine the cooked bulgur wheat, diced cucumber, diced tomato, chopped parsley, chopped mint, and crumbled feta cheese (if using).
- Drizzle the salad with lemon juice and olive oil, and season with salt and pepper to taste. Toss everything together until well combined.
- Once the kofta is cooked, remove them from the oven and let them cool slightly.
- To serve, divide the bulgur salad among serving bowls and top with the baked Shami Bulgur Kofta.
- Garnish with additional fresh herbs if desired, and serve immediately.
