Spiced Kofta with Tomato Sauce

Ingredients:

For the kofta:

  • 500g Seasoned Kofta (can be beef, lamb, or chicken)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Wooden or metal skewers

For the tomato sauce:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (400g) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions:

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning while grilling.
  2. In a large bowl, combine the Seasoned Kofta with chopped onion, minced garlic, ground cumin, ground coriander, paprika, ground cinnamon, salt, and pepper. Mix well until all the ingredients are evenly distributed.
  3. Divide the kofta mixture into equal portions and shape them onto skewers, forming elongated sausage-like shapes.
  4. Preheat your grill to medium-high heat.
  5. Place the kofta skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the kofta is cooked through and has nice grill marks on all sides.
  6. While the kofta is grilling, prepare the tomato sauce. Heat olive oil in a saucepan over medium heat. Add chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
  7. Stir in crushed tomatoes, dried oregano, dried basil, salt, and pepper. Simmer the sauce for about 10-15 minutes, stirring occasionally, until it thickens slightly and the flavors meld together.
  8. Once the kofta skewers are cooked, remove them from the grill and let them rest for a few minutes.
  9. Serve the spiced kofta hot with the tomato sauce spooned over the top.
